Rice Milk

Rice milk is a versatile dairy-free alternative that's simple to make at home. Soak uncooked white rice in hot water, blend it with fresh water, salt, and optional honey, and strain it through a cheesecloth or fine towel. The result is a creamy, slightly sweet milk perfect for drinking, baking, or adding to your favorite recipes.

Ingredients

  • ¾ cup uncooked white rice
  • 4 cups water (adjust for desired thickness)
  • Pinch of salt
  • Optional: honey to taste

Instructions

  • Soak the rice in 2 cups of very hot water (not boiling) for 2 hours.
  • Drain the rice and add it to a blender.
  • Add 4 cups of fresh water, a pinch of salt, and honey if using.
  • Blend until well combined.
  • Taste and adjust the flavoring.
  • Strain the mixture through a cheesecloth or a fine mesh strainer.
  • Store the rice milk in the refrigerator for up to 5 days, or freeze for later use.

Rice Flour Honey Pancakes

These rice flour honey pancakes are a gluten-free delight with a touch of natural sweetness. White rice flour forms the base, combined with honey, a beaten egg, water, and a pinch of salt. The result is a smooth batter that turns into fluffy pancakes when cooked. They're perfect for a leisurely breakfast or a sweet treat, and you can customize them with your favorite toppings like cinnamon, bananas, and strawberries.

Ingredients

  • 1 ¼ cups white rice flour
  • 3 tablespoons honey
  • 1 egg, beaten
  • ¾ cup water
  • ¼ teaspoon salt
  • 2 tablespoons oil
  • Optional: cinnamon, bananas, strawberries

Instructions

  • In a bowl, combine the white rice flour, honey, beaten egg, water, and salt.
  • Mix until a smooth batter forms.
  • Heat oil in a pan over medium heat.
  • Pour a portion of the batter into the pan to form a pancake.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

Banana Pancakes

Apple Jam

Create your own apple jam with this recipe. Cook diced apples with sugar, lemon juice, and a pinch of salt until they're soft and the mixture has thickened. Mash to your desired consistency, cool, and store in the refrigerator. Customize your jam with additional ingredients like cinnamon or orange juice for added flavor.

Ingredients

  • 4 ½ cups peeled and diced apples (about 4-5 medium sized apples)
  • ½ cup sugar
  • 2 Tbsp lemon juice
  • Pinch of salt

Instructions

  • In a saucepan, combine the peeled and diced apples, sugar, lemon juice, and a pinch of salt.
  • Bring the mixture to a boil over medium heat.
  • Cook the mixture for about 20 minutes, stirring frequently.
  • Mash the mixture with a spoon to achieve your desired chunky texture.
  • Remove from heat and let the apple jam cool.
  • Store the apple jam in the refrigerator for up to 3 weeks.
  • You can modify the jam by adding ingredients like cinnamon or orange juice for extra flavor.

Banana Muffins

These banana muffins are not only gluten-free but also incredibly easy to whip up. Mashed bananas provide natural sweetness, while white rice flour forms the gluten-free base.   • 1 ¼ cups white rice flour

  • 2 Tbsp honey

  • Oil for greasing muffin pan

Instructions

  • Preheat the oven to 350°F and grease a 12-cup muffin pan.
  • In a bowl, mix together white rice flour, salt, honey, egg, water, oil, and mashed bananas.
  • Spoon the batter evenly into 10 slots of the muffin pan.
  • Add water to the remaining two slots to ensure even baking.
  • Bake for 15-20 minutes or until a toothpick inserted into a muffin comes out clean.
  • Remove from the oven and let cool before serving.

Apple Sauce

Homemade applesauce is a true delight, and this recipe keeps it simple. Just peel, core, and chop regular apples, simmer them with a bit of water, and sweeten to your taste with sugar and a pinch of cinnamon. The result is a fresh, preservative-free applesauce that's perfect as a snack or as an ingredient in various recipes.

Ingredients

  • 6 regular apples, peeled, cored, chopped
  • 1/3 cup water
  • 2 Tbsp sugar (optional)
  • ½ teaspoon cinnamon

Instructions

  • In a saucepan, combine chopped apples, water, sugar (if using), and cinnamon.
  • Bring to a boil, then reduce to a simmer and cover.
  • Cook for 15-20 minutes or until the apples are very tender.
  • Blend the cooked apples to make applesauce.
  • If not consuming immediately, add 1-2 tablespoons of lemon juice to prevent browning.
  • Store in the refrigerator.


Elevate your homemade applesauce by adding a burst of strawberries toward the end of the cooking process. Potato Pancakes

These potato pancakes are a delightful blend of grated potatoes, egg whites, scallions, and seasonings. Baked to a crispy perfection in the oven, they make a wonderful side dish or even a tasty breakfast option.

Ingredients

  • 2 potatoes, peeled
  • 1 large egg white
  • 2 finely chopped green onions (can use any type of onion here)
  • Salt and pepper

Instructions

  • Preheat the oven to 450°F and lightly grease a baking sheet or use parchment paper.
  • Grate the potatoes and squeeze out excess liquid using a cheesecloth or sieve. Let the grated potatoes settle for about 10 minutes, then pour off any excess liquid, reserving the leftover potato starch.
  • Beat the egg white until it holds a soft peak. Fold in the grated potatoes, chopped scallions, reserved potato starch, and season with salt and pepper.
  • Use a spoon to drop spoonfuls of the mixture onto the baking sheet, about 5cm apart. Gently flatten each round.
  • Bake for 8-10 minutes or until the bottoms are browned, then flip and bake for another 4-6 minutes.
  • Remove from the oven and allow to cool slightly before serving.

Mashed Potato Pancakes

If you have leftover mashed potatoes, put them to good use with this recipe. Combine mashed potatoes with eggs, rice flour, and your choice of seasonings, then sauté the mixture into golden pancakes. It's a fantastic way to repurpose leftovers into a new and delicious meal.

Ingredients

  • 2 cups leftover mashed potatoes
  • 1-2 eggs
  • ¼ cup rice flour
  • Salt, pepper, garlic powder, onion powder, chives
  • Oil for sautéing

Instructions

  • In a bowl, combine all ingredients except for the oil and mix well until the ingredients are fully combined and the mixture holds together.
  • Heat oil in a pan over medium heat.
  • Scoop a portion of the mashed potato mixture and shape it into a pancake.
  • Place the pancake in the pan and cook until the bottom is golden brown and crispy and then flip and cook the other side until browned.
  • Repeat the process with the remaining mashed potato mixture, adding more oil as needed.
  • Drain the pancakes on paper towels before serving.

Chicken Spread

Homemade chicken spread is a versatile and flavorful addition to your culinary repertoire. This easy-to-make spread combines cooked chicken, onions, and optional seasonings like garlic, salt, and spices. Blended to a smooth consistency with the addition of oil, this spread is perfect for chef's salads, rice flour pita sandwiches, or as a filling for the delightful chicken taquitos (see below).

Ingredients

  • 1/3 lb cooked chicken
  • 3 slices of onion, chopped and cooked (adjust quantity to taste)
  • Optional: garlic, salt, spices
  • 3 Tbsp oil

Instructions

  • In a food processor or blender, combine cooked chicken, cooked onions, and any optional seasonings you prefer such as garlic, salt, and spices.
  • Blend until the mixture is well combined and reaches a spreadable consistency.
  • Gradually add oil while blending to create a smooth spread.


Use the chicken spread in chef's salad, on rice flour pita, or in the chicken taquito recipe.

Rice Flour Pita

This simple recipe can be used as the basis for so many recipes and is a total workhorse in the kitchen. Easy to make ahead in large batches, the dough can be stored in the fridge and used from cold for pitas when ready, for chicken taquitos, or for breakfast bites. There’s no end to the creativity with this easy recipe! 

Ingredients

  • 1 cup water
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • ½ cup white rice flour + 1 Tbsp white rice flour
  • Light oil for cooking 

Instructions

  • In a pot, combine water, salt, and olive oil. Bring to a boil, then remove from heat.
  • Stir in white rice flour to create a dough. Let it cool.
  • Heat a light amount of oil in a pan over medium-high heat
  • Scoop spoonfuls of the dough into the pan and flatten with a spatula to make pita breads. Cook until both sides are browned. You can brown this much more than you think and the inside continues to stay soft and delicious!

Chicken Taquitos

Ingredients

  • Cold rice flour pita dough 
  • Chicken spread 

Instructions

  • Take a portion of cold rice flour pita dough and press it out into a roughly 3"x5" oval or rectangle.
  • Spread a layer of the chicken spread onto the pita dough.
  • Roll up the dough tightly around the chicken spread, similar to a taquito.
  • Preheat your air fryer to 390°F for 3 minutes.
  • Place the rolled taquitos in the air fryer basket, leaving space between them.
  • Air fry the taquitos for about 8 minutes or until they are golden brown and crispy.
  • Carefully remove them from the air fryer and let them cool slightly before serving.

Chicken Meatballs

These chicken meatballs are a savory treat. Ground chicken is blended with cooked rice, grated onion, an egg, minced garlic, fresh basil, fresh oregano, salt, and pepper to create flavorful meatballs. Air fry them to a golden perfection for a delicious and healthier alternative to traditional meatballs.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ½ cup cooked rice
  • ¼ cup grated onion
  • 1 egg
  • 1 clove finely minced garlic
  • ½ tsp fresh basil or ¼ tsp dried
  • ½ tsp fresh oregano or ¼ tsp dried
  • Salt and pepper
  • 1 Tbsp oil (for air frying)
  • Additional oil (for sautéing or baking)

Instructions

  • In a food processor, grind 1 lb of chicken breasts until ground.
  • Combine the ground chicken with cooked rice, grated onion, egg, minced garlic, fresh basil, fresh oregano, salt, and pepper.
  • Blend the mixture in the food processor until well combined.
  • Form the mixture into meatballs.
  • If air frying, preheat to 390°F and then air fry the meatballs for 5 minutes, shake, and air fry for an additional 5 minutes. If sautéing or baking, you can use a pan over medium high heat or cook in the oven at 350°F for 10 minutes. No matter the cooking method, check that the internal temp is at 165°F before eating.

Tomato Sauce

This sauce begins with sautéed onions and garlic, followed by blistered cherry tomatoes. Season it with basil, oregano, salt, pepper, and a hint of sugar. Strain and use this flavorful, satisfying sauce for many different recipes!

Instructions

  • In a pan, sauté onions and garlic in avocado oil until softened and fragrant.
  • Add cherry tomatoes to the pan and cook on medium heat, stirring often. Wait for the tomatoes to blister and press gently to pop them.
  • Continue reducing until a sauce forms.
  • Season the sauce with basil, oregano, salt, pepper, and a little sugar.
  • Strain the mixture through a mesh sieve to remove skins and seeds.
  • Serve with rice noodles and chicken meatballs. Or use as a dipping sauce for chicken nuggets! 

Pesto Sauce

Pesto sauce, a vibrant blend of garlic, olive oil, fresh basil, and salt, adds a burst of flavor to your dishes. It's a versatile sauce that can be used to season rice noodles, top chicken breasts, or dress up a baked potato. With its fresh and aromatic ingredients, it's a simple way to elevate your meals.

Ingredients

  • 3 garlic cloves
  • ¼ cup olive oil
  • 2 cups fresh basil
  • ½ tsp salt

Instructions

  • In a food processor, blend garlic cloves, olive oil, fresh basil, and salt until smooth.
  • Use the pesto sauce to flavor rice noodles, top chicken breasts, or dress a baked potato.

Fried Rice

Whip up a quick and delicious fried rice that's brimming with flavor. Sauté chicken and veggies in avocado oil, seasoning with salt and pepper. As you cook, add eggs to the rice and stir, creating a luscious coating. This step ensures that all of the rice is coated with the egg before cooking! Customize it further with your preferred seasonings like turmeric or paprika. It's a delightful meal that's easy to prepare.

Instructions

  • In a pan, sauté chicken and veggies (such as onions, carrots, and spinach) in avocado oil. Season with salt and pepper.
  • While cooking, crack 1 egg per cup of cooked white rice onto the rice in a separate bowl. Stir to coat the cooked rice with the raw egg.
  • Once the chicken is no longer pink, add the egg-coated rice to the pan with the chicken and veggies.
  • Stir regularly to combine the ingredients.
  • Season the fried rice with salt, pepper, and your preferred seasonings such as turmeric or paprika. Sprinkle some chopped green onions on top, if you'd like!

Sautéed Rice Noodles with Chicken and/or Veggies

Take the fried rice concept to a new level by using rice noodles instead of rice. Sauté chicken and veggies in avocado oil, stir in eggs to coat the noodles, and add your choice of seasonings. The result is a satisfying dish with crispy rice noodles and a medley of flavors.

Instructions

  • Follow the same steps as for fried rice , but use cooked rice noodles instead of rice.
  • Brown the rice noodles slightly for added crispiness.

Chicken Burger

Indulge in a homemade chicken burger that's bursting with flavor. Ground chicken is combined with grated onion, an egg, minced garlic, salt, and pepper to form patties. Cook them to perfection and sandwich them between rice flour pitas. Top with lettuce, tomato, onion, avocado, and even a fried egg if desired. It's a delicious burger you can easily make at home.

Ingredients

  • 1 lb chicken breasts, ground
  • ¼ cup grated onion
  • 1 egg
  • 1 clove finely minced garlic
  • Salt and pepper
  • Rice flour pitas
  • Lettuce, tomato, onion, avocado, fried egg (for topping)

Instructions

  • In a bowl, combine the ground chicken, grated onion, egg, minced garlic, salt, and pepper.
  • Blend the mixture well and form patties.
  • Heat a pan with light oil over medium heat.
  • Cook the chicken patties in the pan until they are cooked through and reach an internal temperature of 165°F.
  • Sandwich each patty between two rice flour pitas.
  • Top with lettuce, tomato, onion, avocado, and even a fried egg if desired.
  • Enjoy your homemade chicken burger!

Gnocchi

Experience the delightful taste of homemade gnocchi with this simple recipe. Start by cooking peeled and diced potatoes until they're soft, then chill them thoroughly. Mash the chilled potatoes and combine them with rice flour and salt, forming a smooth dough. Shape the dough into small cylinders, cut them into 2cm pieces, and boil them in salted water until they float. After draining, toss the cooked gnocchi with olive oil and salt, and serve them with your choice of pesto or homemade tomato sauce.

Ingredients

  • 2 cups peeled and diced potatoes (about 2-3 potatoes depending on size)
  • 1 1/3 cups rice flour
  • 1 Tbsp salt
  • Olive oil
  • Salt
  • Pesto or homemade tomato sauce 

Instructions

  • Cook the peeled and diced potatoes until they are soft.
  • Allow the potatoes to cool and refrigerate them until they are completely chilled.
  • Once chilled, mash the potatoes.
  • Gradually add the rice flour and salt to the mashed potatoes while mixing until the dough is smooth and consistent.
  • Roll the dough into small cylinders and cut them into 1 inch long pieces.
  • Boil salted water and cook the gnocchi until they float to the surface.
  • Drain the cooked gnocchi and toss them with olive oil and salt.
  • Serve the gnocchi with your choice of pesto or homemade tomato sauce.
